I made this salad for no other reason than to try out my new "Spiraliser" Kitchen Aid attachment . The attachment worked a treat and the kids wanted to spiralise everything in the fridge - an hour of fun!
This is a very straightforward and simple salad which would do four as a side salad or two as a main course. I like the opposite combinations of the raw/cooked veg, the tangy peppadew peppers/smooth creamy Feta,all brought together by the sharp herby dressing.
Courgette, Corn & Feta Salad
4 Corn on the Cob, husks & silksremoved
Oil for brushing the corn
10 Peppadew Peppers, sliced
80ml Olive Oil
60ml White Wine Vinegar
Handful of Flat-Leaf Parsley, chopped
Handful of Basil Leaves, chopped
Half a teaspoon Red Pepper Flakes
100g Feta Cheese, cubed or crumbed
Brush the ears of corn with the oil then chargrill on a ridged cast iron pan, under the grill or on the BBQ grill. When browned remove from the heat and let cool a while. Then slice the corn kernels off the cobs - no need to break slices into individual kernels, in fact keep as many whole chunks as possible.
As you can see form the photo I “spirallised” my courgettes, only because I got a new Kitchen Aid attachment and wanted to try it out! Usually I would just slice the courgette finely lengthwise or use a mandoline.
In a mason jar combine the basil, parsley, olive oil, vinegar, and pepper flakes and shake well together to emulsify.
In a large bowl gently mix together the corn, courgettes, spring onions and peppadew peppers. Add the dressing and gently combine everything together. Place the salad in a serving bowl/plate and top with the cubed or crumbed feta cheese and a good grinding of salt and pepper.
